A sheen is simply the shininess a particular paint has. There's less shiny paint, like flat paint and it progresses all the way up to a gloss paint, which is very shiny that it's almost reflective.

Flat Paints are great for being invisible. A ceiling is typically done with flat.

Matte is another flatter paint, but a touch less flat. It's more easily cleanable than a flat paint, so it should be used in areas with more traffic.

Eggshell is when the paint starts becoming noticeably 'shiny'. This is what most walls are painting with. It shows a bit more texture than the previous finishes, but it's easily washable.

Satin is the next step up from eggshell. Again, it's extremely washable and will reflect texture more obviously. It's got a nice smooth finish that feels satisfying to run your fingers along. Great for accenting a wall.

Semi-gloss. Speaking of accenting, semi-gloss is great for small accents in a home. Trim, doors and handrails are usually painted in this sheen. It's reflective and will show texture quite well.
